Outreach Education Coordinator, Laura Rogers, was a featured speaker in the Healthy Eating series at the Cumberland County Extension Center on Thurs., Jan. 21, helping attendees learn to cook with soy foods. Rogers educated participants on soy nutrition and they made turkey, tofu and zucchini lasagna, edamame succotash salad and silky tofu chocolate pudding. The silky tofu chocolate pudding recipe was from A Southern Season in Chapel Hill.The class learned about the role that soy foods play in a healthy diet, the activities of the North Carolina Soybean Producers Association and today’s farming. John Gillis, David Gillis and James W. Gillis (pictured left to right in photo) of Gillis Hill Farms in Fayetteville, NC, who farm 2000 acres of soybeans, tobacco, corn, and cotton and have a produce market and ice cream shop, attended the class. The Gillis brothers enjoyed learning to cook with soy in addition to growing it, and having soy growers enhanced the class for everyone.
